Last week we heard from Paul Ellingstad, coordinator of Circular Clarecastle. The group has been to the forefront of promoting the Circular Economy and while the project is still fledgling, it has been gathering momentum. Two of the early adapters of the practice were Ellen Quinn and Joe Deasy. Ellen Quin established Hurst Botanicals along with her partner Alex last year.
